Vegetarian spring rolls

Crisp, fresh, and bursting with color, these vegetarian spring rolls are packed with flavor in every bite!

Preparation

Julienne the vegetables.
Cook the rice noodles and mix them with the can of red beans in sweet chili sauce.
Soften the rice paper wrappers by dipping them in a bowl of warm water, then place them on paper towels.
On each rice paper, place a few julienned vegetables in the center along with a mint leaf, a cilantro leaf, and about two tablespoons of the red bean and rice noodle mixture.
Roll up the wrapper tightly to form a spring roll.

Tip:

For an extra treat, dip the rolls in a peanut sauce!
