As everyone knows, baked beans are made with navy beans simmered in a slightly sweet sauce that infuses the beans with a brown or reddish colour as they cook.
In the past, beans were cooked slowly over low heat directly over embers in a ceramic pot or metal pot. Some claim this dish has its origins in French cassoulet, which a ship captain cooked up during a France-Quebec crossing.
North Americans drew inspiration from this dish to create the traditional baked beans recipe! In 1877, William Clark took advantage of the popularity for the dish to launch his own brand of beans on St-Antoine Street in Montreal.
Well known from coast to coast, Mr. Clark and his family have always paired comfort and flavour to prepare their simple and traditional recipes by using carefully selected ingredients. It’s little wonder that during the war, their products became favourites in Canadian households.
In the 1960s, this Canadian brand was acquired by a Quebec company that faithfully carried on this authentically local tradition. The 1990s marked a turning point for canned beans as the beans’ new image and popularity rose among Quebecers.
