Burrito-Style Pasta with Black Beans

No need to add a bunch of extra seasonings to this pasta dish—the already seasoned black beans bring all the vibrant flavours of Mexico!

Preparation

In a large pot of boiling salted water, cook the fusilli until al dente. Drain.
In the same pot, heat a bit of olive oil over medium heat. Cook the bell pepper for 3 to 4 minutes.
Add the tomato sauce and bring to a boil, stirring. Let simmer over low heat for 3 to 4 minutes.
Add the seasoned black beans, lime zest and juice, and the pasta. Season with salt and pepper, then stir.
Top with cheddar cheese and heat until slightly melted.

Tip:

If desired, garnish with cilantro before serving.
