Asian style vegetarian bowl

This reinvented vegetarian bowl highlights red beans in a sweet chili sauce, creating the perfect balance of sweetness, spice, and freshness. A complete, colourful, and well-balanced meal — ideal for a healthy lunch or a light dinner!

Ingredients 

  • - 1 can of Clark Small red beans sweet chili sauce
  • - 3 cups cooked white rice
  • - 210 g (1 ½ cups) frozen edamame, blanched
  • - 2 Lebanese cucumbers, thinly sliced
  • - 2 carrots, cut into fine julienne strips
  • - ¼ cup fresh cilantro leaves
  • - ½ cup finely shredded red cabbage
  • - Japanese sesame dressing (Wafu-style), optional

Preparation

In each bowl, place about 1 cup of cooked rice.
Top with ½ cup of red beans in sauce, the vegetables, and cilantro.
Season with salt and pepper to taste. Serve with Japanese sesame dressing, if desired.

Tip:

Add a squeeze of fresh lime juice just before serving to brighten the flavours and add a refreshing touch.
